Lo Mein Recipe

This Lo-Mein dish will put PF Chang's in the shade!

Asian food is one of the most popular and delightful cuisines. And what is more delicious than a Vegetable Lo-Mein recipe?

It's super easy and quick to prepare: I promise you, it will be ready in no more than 15min, word of a foodie! It is also high in protein so you won't have to worry about missing nutrients in your daily diet. All you need to do is prepare the sauce, chop the vegetables and cook the pasta - it's this simple!

!!!Warning!!! The original Asian Lo-Mein noodles are made with eggs. Be sure to use a vegan-friendly brand, or simply use another type of pasta such as edamame or Soba noodles. 

Here is the secret to the most delicious Vegetable Lo-Mein.

Servings: 4

Preparation time: 15 minutes

Ingredients

For the sauce:

  • 2 tablespoon of low sodium soy sauce or tamari sauce for a gluten-free version
  • 1 teaspoon of miso paste.
  • 1 tablespoon of sesame oil
  • 1 teaspoon of natural agave syrup (coconut, maple or rice syrup is fine too)

For the Lo-Mein:

  • ¾ to 1 pack of your favorite vegan noodles (Could be soba, edamame noodles, etc.)
  • 1 teaspoon of sesame oil
  • Some chopped spring onions (separate the green parts from the white ones, you will use them separately)
  • 2 to 3 cups of your favorite finely chopped veggies (carrot, red pepper, cabbage, bok choy, mushrooms, etc.)
  • A handful of bean sprouts
  • 1 to 2 tablespoon mirin sake (optional)

Instructions

  1. Prepare your sauce: pour all the ingredients into a bowl and shake or mix well in order to have a nice thick texture. Set aside.
  2. Cook your noodles according to package directions. Drain and reserve.
  3. Heat the sesame oil in a wok or a large, deep frying pan with the maximum heat. Add the white part of the spring onions and vegetables you have chosen to the skillet. Sauté until tender when chopped with a fork, about 5 minutes.
  4. Lower the heat and add the mirin to loosen any vegetable that has stuck to the bottom of the skillet. Combine with the noodles & your sauce. Mix in the skillet to combine well.
  5. Add more sauce if you need it, try or observe the color of the noodles to find out if you need more (you should look for medium brown color, it should not be too dark or too light).

Serve and decorate with the green part of the spring onions!
